Bibique


















Coconuts 4





Flour 3 cups (600gm)





sugar 6cups (1.2kg)





Egg yolks 20





Cardamom/Nutmeg





Ghee 1/2 cup





Preparations:





  • Extract thick juice of grated coconut.

  • Prepare sugar srup thick with 6 cups of water. Cool the syrup

  • Add beaten yolks and cocnut milk and make a thin batter. Add flavouring.
  • Melt half cup of ghee in a heavy- bottomed pan.
  • When hot, pour about one or one and half cups of batter. close and cook for abt 20 to 30min or until brown on the top

  • Put a spoon of ghee on the top and pour another layer of batter and cook for 20-30minutes.
  • Repeat the layer of batter till the batter is used up

  • When done remove from fire and turn over and sprinkle icing sugar.
